About Our Dry Aged Beef
28 days of ageing is the most commonly requested age in steaks, producing a very tender cut with a flavour often described as buttery and deeply beefy. At 45 days, the flavour of the fat changes before the meat does, which is why the fat should not be over-trimmed before cooking. Very long ageing, including 120-day dry aged steak, is for customers who appreciate an unusually intense and rare beef flavour.
